I was wondering...

What do law students/non-law students hope to gain from attending open days?

I have been to a few and cannot pin point the necessity of some of them.

Do you mean open days at law firms? If so, they give you a perspective into company/corporate culture, they let you meet people who work at the firm and they give you a chance to meet your peers - they're a good way to learn about law, law firms and the legal industry.
